Rolling in Flavor: A Successful Food Truck Summer

By Jackie Gentile

November 2025

From July through September, every Tuesday, and occasionally Wednesday, our town had one more eatery from which to choose—food trucks. These eateries not only offered delicious and diverse food, they created a social integration. Neighbors met new neighbors as they stood in line; families set up tables and chairs for an evening to dine out; and at times, patrons would enjoy listening to and singing along with musicians who happened to show up. And we can’t forget Sister Judith who parked herself at a table selling Otis sportswear.

I write this article feeling positive about this summer project because of what I witnessed and experienced firsthand. One night I shared a table with campers from Laurel Ridge, who raved about the food and a night out without driving too far. I understand there were over 30,000 Facebook views! We were especially pleased that State Representative Leigh Davis “liked” us.

The food truck owners were just as pleased given the successful turnout every week. As a thank you to the town of Otis, four of the food trucks—Vlad’s, Seven B, Chappy’s and Saucy Mama—all made donations to the Farmington River School. They are all class acts!

The food trucks are now gone and hope to return next year. I and many others, hope so, too!

But wait! There is a food truck that has parked itself at Paige’s. As I write this article, a food truck run by Otis residents, Sinti and Kristina, will be at Paige’s every Tuesday (11am - 2:30pm) and Wednesday and Thursday (Noon - 5:30pm). They may add additional days. For menus and confirmation of time/date, please go to their website Rustikeats.com, Facebook page or Instagram @rustikeats.
